South Indian food is often associated with darshinis, quick and affordable eateries known for dishes like dosas, vadas, and filter coffee. Traditionally, this segment has been tied to low-cost offerings. The founders of The Filter Coffee, Avinit Bagri and Sankrit Iyer, identified a gap in the market—South Indian cuisine deserved a premium upgrade, especially as India’s growing middle class sought higher-quality dining experiences.

Founded in 2014 with an initial investment of ₹75 lakh, The Filter Coffee aimed to elevate this space by creating premium, casual dining experiences while preserving the authenticity of traditional South Indian food.

Growth and Expansion Over the Years

In less than a decade, The Filter Coffee has expanded from a single 40-seater outlet in Bengaluru to nine outlets, including cloud kitchens and quick-service restaurant formats. The company is on track to surpass a ₹100 crore revenue run rate by the end of FY25 and plans to expand to 22 outlets in Bengaluru by October 2026.

What sets The Filter Coffee apart is not just its scale but its tech-driven operational model. The company operates a US FDA-certified manufacturing facility in Doddaballapur, handling everything from raw material aggregation to batter manufacturing, namkeen production, and vegetable processing. This ensures a highly efficient and traceable phygital supply chain, maintaining consistency and quality across all outlets.

AI-Powered Manufacturing for Precision and Control

The Filter Coffee has invested significantly in AI-powered monitoring systems across its manufacturing unit. AI cameras track operations such as door closings and correct handling of packaging materials, ensuring smooth and safe processes.

This technology allows the company to maintain high gross margins by tracking every element of production, from batter to the final dish. The focus on traceability and efficiency supports scalability while ensuring food quality remains uncompromised.

Strong Unit Economics and Revenue Streams

In an industry known for thin margins, The Filter Coffee stands out with its robust unit economics. The investment required for a store ranges between ₹70 lakh to ₹2 crore, depending on size and location. The payback period is quick, at 15 to 18 months, with stores consistently delivering EBITDA margins over 20 percent.

The brand’s revenue mix is 70 percent from offline sales and 30 percent from online channels. Breakfast is the highest-grossing category, contributing around 40 to 45 percent of total revenue, followed by dinner and snacks.

Venturing into FMCG with Origins by TFC

The Filter Coffee is expanding beyond restaurants with a new FMCG line called Origins by TFC. Responding to customer demand, Origins will offer packaged products such as batters, condiments, chips, sweets, and savories.

Initially focusing on potato chips, the company aims to scale production to 4,000 kg per day. The FMCG division is expected to contribute 30 to 35 percent of revenue in the next two to three years.

Future Plans and Brand Expansion

With backing from Deepak Agarwal of BKG Group, The Filter Coffee plans to invest ₹30 to 35 crore in FY26 to expand its brand, infrastructure, and FMCG segment.

The expansion strategy includes company-owned outlets in Delhi, Chennai, and Hyderabad, avoiding the franchise model to maintain full control over quality and intellectual property. The goal is to replicate the Bengaluru model across six to seven cities simultaneously, building a sustainable brand with a strong local presence.
